Here’s a few new tidbits Apple has made available online today:

http://www.apple.com/iphone/questionsandanswers.html

One item of importance to me is that the iPhone WILL allow you to assign a 4-digit PIN to wake from sleep or unlock for use.

No word yet on whether we’ll be able to voice dial via bluetooth.  The iPhone will be pretty useless for making calls while you’re driving if it doesn’t, since you must then look at the iPhone, make menu selections, and tap on the numbers/Address book entry you want to call, pretty difficult if you want to continue to live while on the freeway.

The FAQ says “most Bluetooth headsets work” with iPhone, neatly skipping the point that as a MUSIC device (i.e., your iPod replacement) the Bluetooth support is useless because it’s only MONO.  Even though the Bluetooth stack on the phone supports A2DP, Apple chose to disable that.  Guess they’re just holding out until they sell their own Bluetooth stereo headphones?  :-(

I wasn’t aware that the iPhone Bluetooth stack supported A2DS stereo.  Do you have a link for that?

I tried my Motorola H700 Bluetooth headset with the iPhone, and it paired just fine.  However, the audio was unusable, not being audible at either the receiver’s nor my end.

There’s a good discussion of this topic on everythingiPhone:  http://www.everythingiphone.com/forum/bluetooth/iphone-support-a2dp-2957-2.html#post53393

The gist of it is that Apple licensed the Bluetooth stack from a company called Open Interface, and apparently that software offers support for all the BT profiles and protocols.  But Apple seems to have disabled support for A2DP, as well as other useful options (discussed on Gizmodo:  http://gizmodo.com/gadgets/iphone/iphone-bluetooth-not-much-but-whats-there-is-charming-274068.php )

Apparently your experience isn’t all that unusual, even standard one-ear Bluetooth seems to be sketchy.  What could be more basic than making sure you can hear & talk with the iPhone???
